Did you grow up ordering a brown cow at the ice cream shop? Others will know it as a good old fashioned root beer float, but it’s all the same language. The only difference is now root beer has been revived in marshmallow form, which makes for a transcendent rice crispy treat. While this chewy version isn’t made with a scoop of vanilla and a can of pop, those childhood memories will surely come floating to the top.
Ingredients
1/3 cup coconut oil
3 (4.5 oz.) packages Root Beer Float Smashmallow
6 cups brown rice cereal
Directions
- In a large saucepan over high heat, melt coconut oil.
- Turn down heat to medium-high and add all marshmallows. Stir frequently until melted and smooth.
- Pour in cereal and start stirring immediately to evenly coat cereal with marshmallow mixture.
- Press mixture into an 8” x 8” pan and let sit before serving.
