Did you grow up ordering a brown cow at the ice cream shop? Others will know it as a good old fashioned root beer float, but it’s all the same language. The only difference is now root beer has been revived in marshmallow form, which makes for a transcendent rice crispy treat. While this chewy version isn’t made with a scoop of vanilla and a can of pop, those childhood memories will surely come floating to the top.

Ingredients

1/3 cup coconut oil
3 (4.5 oz.) packages Root Beer Float Smashmallow
6 cups brown rice cereal

Directions

  1. In a large saucepan over high heat, melt coconut oil.
  2. Turn down heat to medium-high and add all marshmallows. Stir frequently until melted and smooth.
  3. Pour in cereal and start stirring immediately to evenly coat cereal with marshmallow mixture.
  4. Press mixture into an 8” x 8” pan and let sit before serving.
