Apple, Leeks & Sausage Casserole

Ingredients

Instructions

  1. In cast iron skillet over medium-high heat, heat oil. Sauté leeks, onions and apples with salt and pepper, red pepper flakes and cayenne until leeks are translucent.

  2. Bring temperature down to medium. Add sausage to pan and warm 3-5 minutes.
  3. Adjust top rack in oven to 4-6 inches from top and turn oven to broil. Place skillet on top rack under broiler about 5 minutes with door ajar and brown casserole briefly to your liking.
