Sautéed Sweet Potato Black Bean Salad

Ingredients
- 1 Tbsp. olive oil
- 2 medium sweet potatoes peeled and diced
- 1/2 sweet onion peeled and diced
- 1/2 tsp. garlic powder
- 1/4 tsp. cumin
- Salt to taste
- Pepper to taste
- 15 oz. can cooked black beans, drained and rinsed
- Juice of 2 limes
- 1/4 cup chopped cilantro
- 1 Tbsp. everything bagel seasoning
- Spinach leaves
Instructions

In large pan over medium heat, heat oil.

Add sweet potatoes, onion, garlic powder, cumin, salt and pepper. Cook for about 10 minutes, stirring occasionally, until potatoes soften.

Add black beans and lime juice. Cook for additional 10 minutes, until potatoes are cooked completely.

In bowl, stir together potato/bean mixture with spinach, cilantro and everything bagel seasoning.
