Ingredients
Avocado
- 2 large avocados peeled with pits removed
- 1/4 cup lime juice
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- 1 tsp. salt
- 2 Tbsp. fresh cilantro chopped
Shrimp
- 24 large shrimp peeled and deveined
- 1 Tbsp. lime juice
- 1-1/2 tsp. garlic powder
- 1 tsp. paprika
- 1/2 tsp. cumin
- 1 tsp. salt
- 1 tsp. pepper
- 1 Tbsp. olive oil
Cucumber
- 1-1/2 large English cucumbers peeled & cut into ½-inch circles
Instructions

In medium bowl, mash avocado with a fork until there are no large lumps.

Add lime juice, garlic powder, salt and pepper. Mix well.

Gently mix in cilantro.

Cover and chill.

In large bowl, add shrimp and season with lime juice, garlic powder, paprika, cumin, salt and pepper.

In large pan, heat olive oil over medium heat.

When pan is hot, add shrimp and cook 2-3 minutes on each side until pink and opaque.

Remove shrimp from pan and let cool.

Place cucumber slices on a serving platter and top with smashed avocado, approximately 1.5 tsp. per slice.

Place cooled shrimp on top of avocado, 1 shrimp per cucumber slice.

Serve immediately.
