Slow Cooker Italian Meatballs with Tomato Sauce

Step away from the stove! You don’t need to slave over a hot stove to make delicious Italian meatballs. Instead, let your slow cooker do the work. In this meatball recipe, you mix a few ingredients and let it all cook together in a slow cooker without breaking a sweat. Plus, this recipe stands above the rest because the meaty texture is balanced with cauliflower rice. Meatballs with a serving of veggies? What could be better?

Makes 15 meatballs

Ingredients

Meatballs

1 lb. ground beef
1/2 cup cauliflower rice, thawed if frozen
1 flax egg (1 Tbsp. ground flax plus 2 Tbsp. water) or 1 whole egg
1 garlic clove, crushed
1/2 tsp. Italian seasoning
1/2 tsp. pink salt
1/4 tsp. black pepper

Sauce

2 cups tomato sauce
2 cups chopped fresh tomato
1 garlic clove, crushed
1/2 tsp. oregano
1/2 tsp. pink salt
1/4 tsp. black pepper

Directions

  1. In large bowl, combine meat with cauliflower rice, flax egg, garlic clove and spices. Mix until well combined.
  2. Roll mixture into meatballs about 3 Tbsp. each (about the size of a medium ice cream scoop). Set aside.
  3. In crockpot, combine all sauce ingredients. Add meatballs and cook on low for 7 hours.

For crispier meatballs, bake meatballs at 350 for 20 minutes before adding to slow cooker with sauce.
