Smoked Corn & Tomatillo Salsa

Ingredients
- 1-1/2 lbs. tomatillos husks removed
- 2 ears corn husks removed
- 1/2 white onion
- 3 jalapeños
- 3 cloves garlic
- 1/2 cup cilantro
- 1/2 lime juiced
- 2 Tbsp. grape seed oil divided
- 1/2 tsp. cumin
- Pinch salt
- Pinch pepper

Heat smoker to 325 degrees F.

Rub one tablespoon grape seed oil over vegetables. On sheet pan, arrange tomatillos, corn, onion, jalapeños and garlic cloves. Smoke 35 to 45 mins.

Remove seeds from jalapeños. In blender, combine tomatillos, jalapeños, garlic, onion, cilantro, cumin, lime juice, one tablespoon grape seed oil, salt and pepper; blend until smooth. Adjust seasoning as needed.

Cut corn from cob and mix into salsa.
