Gather ’round the campfire, folks! It’s story time — and this one’s about s’mores. Legend has it, the s’more was invented by youth Scouts in the 1920s. The name is a contraction made by smooshing the words “some” and “more” together, not unlike the gooey marshmallow and melted chocolate smooshed together in this popular summertime treat.
The thing about s’mores is that they’re not all that practical to make at home. They’re meant to be enjoyed immediately (and messily) while standing next to a crackling fire. So if you’re jonesing for a summer-camp-inspired treat, without the required firewood, sticks and loads of napkins, give this portable s’mores pie a try! With a graham cracker crust, chocolate-cream-cheese filling and marshmallow topping, it’ll take you on a trip down memory lane, without the messy fingers. (Although you can certainly eat it with your hands if you so please.)
S’mores Pie Ingredients
For the crust:
• 2 sleeves honey graham crackers
• 1/4 cup Vitacost Coconut Sugar
• 1/2 cup ghee, melted
• 1/4 cup water (enough for the crust to stick together)
For the filling:
• 8 oz. cream cheese
• 12 oz. plain Greek yogurt
• 1/3 cup Vitacost Organic Raw Honey
• 1/2 cup cocoa powder
For the topping:
• Mini marshmallows
S’mores Pie Directions:
1. To make the crust, crush graham crackers and combine with coconut sugar, melted ghee and water.
2. Press into bottom of 9″ springform pan.
3. To make the filling, mix cream cheese, Greek yogurt, honey and cocoa powder.
4. Spread filling over crust.
5. Top with mini marshmallows and put under broiler until browned and slightly crispy. (It will happen quickly!)
