In a serious mood for the flavors of Mexican food but looking to lighten things up? Try spooning some better-for-you fillings into a healthy lettuce wrap. Sauté ground chicken with nutrient-packed garlic, onion, mushrooms, carrot shreds and a generous shake of a great chili pepper-based seasoning blend. Heap the mixture into buttery lettuce leaves and serve with your favorite hot sauce and fresh cilantro for a lean and satisfying twist on tacos.

Ingredients

Instructions

  1. In sauté pan over medium-high heat, heat olive oil; add onion and garlic and sauté until fragrant.
  2. Add chicken, carrots, mushrooms and spice blend. Sauté until chicken is cooked through.
  3. Arrange individual lettuce leaves on plates or platter, spoon chicken and vegetables mixture onto each leaf.
  4. To serve, add hot sauce to taste and garnish with cilantro.
