Spicy Peach Jam Salsa

Are chips and salsa your jam? Now put that jam in your salsa. It’s great if the dynamic duo is your default for every group gathering. But at some point, pouring a store-bought, “restaurant style” jar into a bowl just won’t fit the chip. That’s when a spoonful of spiced peach jam comes in handy. Its stickiness helps hold together all the chunks of fresh-cut fruits and veggies, while its sweet heat adds dimension to every bite. Guaranteed, there won’t be a kernel of salsa left in the bowl – and that’s peachy keen by you!

Makes 8 servings (1 serving is 1/2 cup)

Ingredients

2 lbs. peaches, peeled and diced
1 lb. tomatoes, diced
1 small bell pepper, seeded and diced
1 jalapeno, seeded and minced
1/2 cup Vitacost Organic Black Beans, cooked
1/3 cup red onion, diced
1/3 cup fresh cilantro, chopped
1-1/2 Tbsp. Sonoma Canyon Spiced Peach Pie Jam
2 Tbsp. lime juice
1-1/2 tsp. salt
1/4 tsp. pepper
2 large avocados

Directions

  1. In a large bowl, add all ingredients, except avocados. Gently stir to combine.
  2. Place bowl in refrigerator for at least one hour or overnight.
  3. Just before serving, peel and dice avocados. Add to salsa mixture and stir to incorporate.
