Its stickiness helps hold together all the chunks of fresh-cut fruits and veggies, while its sweet heat adds dimension to every bite. Guaranteed, there won’t be a kernel of salsa left in the bowl – and that’s peachy keen by you!
Makes 8 servings (1 serving is 1/2 cup)

2 lbs. peaches, peeled and diced
1 lb. tomatoes, diced
1 small bell pepper, seeded and diced
1 jalapeno, seeded and minced
1/2 cup Vitacost Organic Black Beans, cooked
1/3 cup red onion, diced
1/3 cup fresh cilantro, chopped
1-1/2 Tbsp. Sonoma Canyon Spiced Peach Pie Jam
2 Tbsp. lime juice
1-1/2 tsp. salt
1/4 tsp. pepper
2 large avocados
- In a large bowl, add all ingredients, except avocados. Gently stir to combine.
- Place bowl in refrigerator for at least one hour or overnight.
- Just before serving, peel and dice avocados. Add to salsa mixture and stir to incorporate.
