Did you know you can help the environment with a plant-based diet? It’s true! Our food choices impact the planet and choosing a plant-based diet can help reduce your carbon footprint. Start with this sweet smoothie bowl for breakfast followed by a tasty raw carrot noodle salad with chili-almond dressing for lunch.
Share this smoothie-making experience with your kiddos and use it as an opportunity to teach them how to care for the environment (think recycling and the importance of avoiding food waste!). Plus, they’ll have fun creating their very own version of planet Earth!
Ingredients
White layer
1/2 frozen banana
1/4 cup Vitacost Organic Raw Whole Cashews
2/3 cup water
Optional: 1 tsp. plant-based vanilla protein powder
Green layer
1/2 frozen banana
1/2 tsp. ROOT² Spirulina Superfood
1 medjool date
2/3 cup water
Blue layer
1 frozen banana
1 tsp. spirulina
1 medjool date
Around 60 blueberries
Dash cinnamon
Directions
- In blender, combine all white layer ingredients until creamy and smooth. Pour into bowl or jar and set aside.
- In blender, combine all green layer ingredients. Pour into bowl or jar and set aside.
- In blender, combine all blue layer ingredients (adding more or less blueberries depending on how blue you want your planet to be!). Pour into bowl.
- To form “clouds,” use spoon to place a few small drops of white layer on top of the blue. Use either a toothpick or bamboo skewer to swirl.
- Once you’re happy with your clouds, form “continents” using a similar technique with spoon to drop on green blobs. Terraform your smoothie bowl by carefully shaping “continents” with spoon. Garnish with shredded coconut and more blueberries if desired!
