The fish is so perfectly flaky and tender, you’ll wonder where this recipe has fin all your life. To create this masterpiece at home, all you need is a smoker grill, fresh salmon filets and a handful of simple ingredients. The salmon marinates overnight, then its cooked low and slow before being hit with a sweet and spicy sriracha-honey glaze. One bite and you’ll be hooked.

Instructions

  1. In small bowl, mix together salt, brown sugar, balsamic vinegar, fish rub and lemon zest. Thoroughly coat salmon with mixture.
  2. Wrap salmon in plastic and arrange on baking sheet. Place a second sheet over salmon; add weight so it presses down on the fish.
  3. Refrigerate at least 14 hours. Using cold water, rinse salmon. Let salmon sit at room temperature for 1 hour.
  4. Preheat smoker grill to 180-200 degrees Smoke fish on grill grate 2 hours.
  5. In small bowl, combine glaze ingredients; brush over salmon. Continue to smoke for 1 hour or until internal temperature reaches 140 degrees F.
  6. Let cool 30 minutes.
