Hot jam that’s good! Before jam is a cold jar in your fridge, it’s a hot mess of melted, mashed-up fruit. But it sure tastes delicious. At least, it will when you follow this recipe for homemade strawberry freezer jam. To keep it easy, you only need three ingredients – and pectin isn’t one of them. You can omit the starch, because the berries will get jelly in the freezer. What you can’t do without is a butter knife and warm biscuit. Good morning, breakfast!
Strawberry Freezer Jam
Ingredients
1 lb. fresh strawberries
1 Tbsp. YS Eco Bee Farms Raw Cinna Honey
Juice of 1/2 lemon
Directions
1. Wash strawberries, remove tops and chop into chunks.
2. In a saucepan over medium heat, add berries, honey and lemon juice. Start to mash berries until you’ve reached your desired jam consistency (chunky or smooth).
3. Bring mixture to a boil. Once boiling, remove from heat and immediately pour into glass jars.
4. Let jam cool completely before sealing the jars. Transfer to freezer and let set until ready to use.
Note: the mixture will still be slightly liquid until you freeze it for several hours.
