Besides, how often do you really get to enjoy a mouthful of fluffy sugar? When it comes to sweet layers of cream on top, cookies don’t usually take the cake. But if you want to get your fix without making up reasons to celebrate, these sugar cookies are here for you. They’re the perfect excuse to enjoy a decadent, white chocolate frosting any day…or every day. Now that’s something to celebrate!

Sugar Cookies with White Chocolate Frosting & Sprinkles

 

Cookies

1 cup gluten-free oat flour
½ cup coconut flour
1 tsp. baking soda
1/3 cup raw honey
1 Tbsp. melted coconut oil
2 egg whites

White Chocolate Frosting

1 cup white chocolate chips
Rainbow-colored sprinkles

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine all ingredients except chocolate chips and sprinkles. Stir until well combined and dough consistency forms.
  3. Using about 1 tablespoon per cookie, drop dough onto non-stick baking sheet. Bake about 8 minutes, or until edges begin to crisp.
  4. In a small bowl, microwave chocolate chips in 30-second intervals until completely melted.
  5. Spoon melted chocolate over cooled cookies. Immediately top with sprinkles.
