Sugar Cookies with White Chocolate Frosting & Sprinkles
Cookies
1 cup gluten-free oat flour
½ cup coconut flour
1 tsp. baking soda
1/3 cup raw honey
1 Tbsp. melted coconut oil
2 egg whites
White Chocolate Frosting
1 cup white chocolate chips
Rainbow-colored sprinkles
Directions
- Preheat oven to 350 degrees F.
- In a large bowl, combine all ingredients except chocolate chips and sprinkles. Stir until well combined and dough consistency forms.
- Using about 1 tablespoon per cookie, drop dough onto non-stick baking sheet. Bake about 8 minutes, or until edges begin to crisp.
- In a small bowl, microwave chocolate chips in 30-second intervals until completely melted.
- Spoon melted chocolate over cooled cookies. Immediately top with sprinkles.
