Summer Salad with Homemade Raspberry Vinaigrette Dressing
Serves 4
Ingredients
Salad
Chopped Romaine lettuce
Cooked, chopped chicken
Crumbled goat cheese
Chopped walnuts
Dried cranberries
Dressing
¾ cup raspberries
¼ cup extra virgin olive oil
½ cup white wine vinegar
2 Tbsp. agave
To make dressing, combine all dressing ingredients in blender and blend until smooth. Pour onto salad or salad of choice.
In a large bowl, combine all salad ingredients. Drizzle dressing over salad.
