Taco Salad with Chili Seasoning Mix

It’s not easy to eat tacos without making a big mess. Admit it, with each delicious crunch, ground beef, salsa and guacamole fall from the shell onto your chin, and maybe onto your clothes! Avoid hard-to-remove salsa stains by sticking to a fork-friendly salad with all the fixings on Taco Night. Take your tastes a step further and cook the meat in a zesty chili seasoning blend. Your taste buds (and your clean t-shirts) will thank you.

Taco Salad with Chili Seasoning Mix

Serves 3

Ingredients

Seasoning

1 Tbsp. chili powder
1 tsp. pink salt
1 tsp. ground cumin
½ tsp. paprika
¼ tsp. ground black pepper
¼ tsp. dried oregano
¼ tsp. garlic powder, optional
¼ tsp. onion powder, optional

Salad

1 lb. organic ground beef
1 avocado, cut into chunks
6 cups fresh-cut romaine lettuce
16 oz. jar mild or medium salsa
15 oz. canned pinto beans
Yellow corn tortilla chips 
(or Homemade Citrus Tortilla Chips)

Directions

  1. In a cast iron skillet over medium heat, cook beef thoroughly. Drain excess fat with paper towels.
  2. In a small bowl, combine taco seasoning. Add seasoning to beef along with a ¾ cup of water. Bring to a boil and then reduce to simmer. Cook covered for about 10-15 minutes or until water is absorbed.
  3. To prepare salad, spread lettuce onto a plate or bowl. Top with beans, avocado, salsa and seasoned beef. Use chips to scoop up and eat salad.
