Instructions

  1. Rinse rice in fine mesh strainer.
  2. In pot, combine rice, coconut milk, water, turmeric and salt. Bring to boil, cover and simmer for time stated on rice package.
  3. Stir in peas and carrots and cook additional 5 minutes to heat veggies through.
