Vanilla Almond No-Bake Cookies

It may be frigid outside, but your kitchen is steaming like a sauna. Between soup on the stovetop, chicken in the crockpot and cornbread in the oven, your house is heating up nicely…a little too nicely. If you have to put one more thing in the oven, you might melt. That’s the beauty of no-bake cookies. They won’t add to your energy bill, but these vanilla-almond treats will add a sweet touch to the end of your hot meal.

Cookies

4 scoops vanilla protein
½ cup almond butter
1/3 cup honey
1 tsp. vanilla flavoring
1 tsp. almond flavoring
2 Tbsp. unsweetened almond milk

Drizzle

¼ cup dark chocolate chips
½ Tbsp. coconut oil

Directions

  1. In a large bowl, mix all ingredients together until it forms a thick, doughy consistency.
  2. Roll into balls and place on parchment-lined cookie sheet.
  3. Using the bottom of a cup, press balls into flat rounds (like cookies!).
  4. In a small bowl, add drizzle ingredients and microwave 30 seconds. Stir and microwave another 30 seconds, if needed.
  5. Once melted, spoon drizzle into a zip-top bag. Cut the corner of bag to create a piping bag, and decorate cookies however you like.
