Vegan Blender Pasta Sauce with Gluten-Free Pasta

How do you convince your children to eat more vegetables? How do you convince your husband, for that matter? The simple, stress-free way is to sneak greens and veggies into dishes the family already loves, like pasta and tomato sauce. This homemade, vegan pasta sauce is made with canned tomatoes, spinach, zucchini and oregano, but it can be easily customized to fit whatever you have on hand. Bonus? It comes together quickly in a blender!

Serves 4

Ingredients

1 (26-oz.) can organic chopped tomatoes
1 small organic zucchini, chopped
1 cup organic spinach
1 Tbsp. fresh oregano leaves
1 garlic clove, peeled and ends trimmed
1 tsp. pink salt
1/4 tsp. freshly ground black pepper
1/4 tsp. turmeric powder
8 oz. cooked gluten-free pasta (any pasta will work)

Directions

  1. In blender, combine tomatoes, veggies and spices. Blend until smooth.
  2. Transfer to medium saucepan, bring to a boil, then simmer on low, covered, for 20 minutes.
  3. Top pasta with sauce.
