The holidays call for traditional recipes our family pass down from generation to generation. Rice balls – or arancini – is one of them. This Italian-inspired dish is commonly made with cheese, eggs and, in many cases, chicken stock. However, this healthier rendition is a combination of gluten-free flour and fresh herbs blended with low-carb cauliflower, which provides the perfect rice-y texture! They’re crisp on the outside, soft on the inside and taste delicious with homemade marinara sauce, creamy dips, hot sauce and salads.

Vegan & Gluten-Free Baked Cauliflower Arancini

Ingredients
- 2 Tbsp. ground flaxseed + 6 Tbsp. water
- 2 cups fresh or frozen cauliflower rice
- 1 cup + 2 Tbsp. almond flour or cassava flour, divided
- 1 Tbsp. olive oil or avocado oil
- 1/4 cup chopped parsley or basil, minced
- 1/2 tsp. pink salt
- 1/2 tsp. black pepper
Instructions

Preheat oven 400 degrees F. Line baking tray with parchment paper.

In small bowl, combine ground flaxseed and water. Set aside for 10 minutes.

In bowl, mix cauliflower rice, 1 cup flour, olive oil, parsley, salt, pepper and flax/water mixture. Scoop out small handful and use hands to roll into 1-in. ball. Repeat with remaining dough. (It should make around 12 balls.)

Cover small plate with 2 tablespoons cassava or almond flour. Roll each ball in flour until fully coated. Transfer to parchment-paper-lined tray, evenly spaced out.

Bake 10 minutes, flip, then bake another 10-15 minutes, until golden.

Serve with salad, hot sauce or your favorite dip.
