Vegan Green Goddess Pasta Salad

Ingredients

  • 12- oz. Jovial Organic Gluten-Free Brown Rice Fusilli
  • 2 Tbsp. extra-virgin olive oil, divided
  • 1 medium zucchini, cut into ¾-in. dice
  • 5 cups packed baby spinach
  • 1 cup unsweetened coconut yogurt
  • 2 cloves garlic
  • 2 Tbsp. shelled hemp seeds
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 cup packed fresh basil leaves
  • 1/4 cup coarsely chopped fresh parsley
  • 1/4 cup coarsely chopped fresh chives
  • 2 scallions, white & light green parts only, thinly sliced

Instructions

  1. In pot filled with well-salted water, cook pasta according to package directions. Rinse and drain thoroughly.
  2. In large skillet, heat 1 tablespoon olive oil over medium-high heat. Add zucchini and stir frequently for 6-7 minutes, or until tender. Season to taste with salt and pepper. Remove from heat and stir in spinach until lightly wilted and fully combined. Set aside.
  3. In food processor fitted with an “S” blade, add coconut yogurt, 1 tablespoon olive oil, garlic, hemp seeds, lemon juice, salt, pepper, basil, parsley and chives. Process until smooth. Adjust seasonings if needed.
  4. In skillet with zucchini and spinach, add cooked pasta, scallions and dressing. Toss to coat. Season to taste with additional salt and pepper, if needed. Serve at room temperature.
