These delicious plant-based gyros are easy to make, despite the long-ish ingredient list. Simply marinate tempeh overnight, then bake and stuff into tortillas or pita along with fresh salad and homemade tzatziki, which is perhaps the best part! Tempeh Gyros with Homemade Tzatziki Sauce

Ingredients

  • 16 oz. tempeh package in block form

Marinade

Tzatziki

  • 1 medium cucumber finely shredded & water squeezed out
  • 1 cup Greek yogurt plain
  • 1 Tbsp. lemon juice
  • 1 Tbsp. olive oil
  • 1/4 tsp. unrefined salt

Instructions

Tempeh (part I)

  1. Fill large pot with steamer basket with about an inch of water. Bring to boil. Slice tempeh into ⅛-inch pieces. When water is boiling, add tempeh to steamer pot, cover and steam for 10 minutes. Note: This removes some of the bitterness.

Marinade

  1. In glass container zip-top bag, combine all marinade ingredients.
  2. When tempeh is done, soak it in marinade for at least 4 hours or overnight.

Tempeh (part II)

  1. Once tempeh is ready, preheat oven to 350 degrees F.
  2. Arrange tempeh pieces on parchment-lined baking sheet. Bake for 15 minutes, flip, then bake another 15 minutes or until edges are brown.

Tzatziki & Salad

  1. In small bowl, combine all tzatziki ingredients.
  2. In large mixing bowl, combine all salad ingredients. Add oil, lemon, salt and pepper to taste.

Gyros

  1. Lay out tortillas or pita breads. Top each one with a generous dollop of tzatziki, salad and tempeh slices.
