Collard Green Veggie Rolls with Tahini-Miso Sauce

Ingredients
Rolls
- 1 head collard greens
- Assorted sliced vegetables asparagus, bell peppers, squash, carrots, etc.
Tahini-miso sauce
- 1/4 cup high-quality tahini
- 1/4 cup water
- 1 heaping Tbsp. white miso
- 1 Tbsp. soy sauce
- 1 Tbsp. rice vinegar
- Sea salt & pepper to taste
Instructions

Fill large pot with boiling water. Blanch each collard leaf in water for about 10 seconds. Remove and pat dry.

On cutting board, lay collard leaves down flat. Cut down the middle and remove the stem from each side (this creates two leaves).

Overlay the greens and fill with vegetables. Roll it up and set to aside. Continue with remaining ingredients
Tahini-miso sauce

In mixing bowl, combine all sauce ingredients. Mix well and adjust seasoning as needed.
