You deserve a cookie. And not just any cookie. Treat yourself with a soft-on-the-inside, crisp-on-the-outside creation made up of white chocolate chunks and peppermint candies. These white chocolate peppermint cookies are simple to make but not easy to forget. If the flavor leaves you wanting more, add a half teaspoon of peppermint extract in with the wet ingredients. For a fun twist, use any of your favorite candies in place of candy canes.

Instructions

  1. Preheat oven to 350 degrees F.
  2. In large mixing bowl, combine butter and sugars until whipped. Mix in egg.
  3. Mix in flour, baking soda and salt until combined.
  4. Stir in white chocolate chunks until evenly distributed.
  5. Scoop out dough and roll into balls over crushed candy canes.
  6. Bake for 13 minutes.
