The next time you have a wild hair or crazy idea, go with it! This especially applies when you’re in the kitchen. Some of the kookiest concoctions have created delightful desserts, including – but not limited to – adding pistachios to blondie bars. Pistachios are closely related to cashew nuts, so you get that familiar creaminess with lots of healthy fats and protein to satisfy growling tummies. And the white chocolate chips are added to calm an unruly sweet tooth. Clearly, some things need taming – but your imagination isn’t one of them.

Ingredients

2 cups oat flour
1 cup almond flour
1-1/3 cups coconut sugar
2/3 cup melted coconut oil
3/4 cup water
1 tsp. vanilla
2 eggs
1/2 cup pistachios, removed from shell
1/2 cup white chocolate chips

Directions

  1. Preheat oven to 350 degrees F and coat an 8” x 8” baking dish with coconut oil.
  2. In a large bowl, add all ingredients, except pistachios and chocolate chips. Stir until well-combined and mixture is smooth.
  3. Add pistachios and white chocolate chips, stirring to incorporate.
  4. Pour or spoon batter into prepared dish and bake 30 minutes, or until a toothpick comes out clean.
