Instructions
  1. Preheat oven to 400 degrees F.
  2. Line rimmed baking sheet with parchment paper. Spray parchment paper lightly with extra virgin olive oil cooking spray.
  3. Add all ingredients to food processor or blender. Blend until smooth.
  4. Using hands or small ice cream scoop, form about 2 Tbsp. of mixture into bite-sized balls and arrange on baking sheet.
  5. Spray falafel balls lightly with extra virgin olive oil spray and bake 22 minutes or until golden brown.
