In large bowl, add flour, cream of tartar, baking soda, pumpkin spice and salt. Mix well and set aside.

In stand mixer or large bowl using hand mixer, cream together butter, white sugar and brown sugar.

Add egg and vanilla extract. Continue to mix until well combined.

In increments, slowly add flour mixture to butter mixture. Beat until well combined.

Cover and chill in refrigerator at least 1 hour.

Preheat oven to 375 degrees F. Line large baking sheet with parchment paper.

In small bowl, mix white sugar and pumpkin spice.

Scoop 2 Tbsp. of dough at a time and shape into balls. Roll balls well in pumpkin spice sugar and arrange on baking sheet 2 inches apart. For flatter cookies, slightly flatten ball of dough.
