Pumpkin Spice Snickerdoodle Cookies
A snickerdoodle cookie has to be soft and chewy. It has to be rolled well in sugar to ensure a crispy coat. Like a wave of a wand from a Sugar Plum Fairy, this recipe sprinkles on seasonal magic with a sparkly dusting of pumpkin spice. Cinnamon, ginger, nutmeg and sugar melt to form a flavorful crust that gives way to the celebrated soft center. Let these gilded goodies shine on your holiday dessert tray!
Pumpkin Spice Snickerdoodle Cookies
Cookies
- ½ cup butter (softened)
- ½ cup white sugar
- ¼ cup light brown sugar
- 1 large egg
- ½ tsp. vanilla extract
- 1-½ cups all-purpose flour
- 1 tsp. cream of tartar
- ½ tsp. baking soda
- 1 tsp. pumpkin spice
- 1/8 tsp. salt
Pumpkin Spice Sugar Coating
- 1-½ Tbsp. white sugar
- 1-½ Tbsp. pumpkin spice
- In large bowl, add flour, cream of tartar, baking soda, pumpkin spice and salt. Mix well and set aside.
- In stand mixer or large bowl using hand mixer, cream together butter, white sugar and brown sugar.
- Add egg and vanilla extract. Continue to mix until well combined.
- In increments, slowly add flour mixture to butter mixture. Beat until well combined.
- Cover and chill in refrigerator at least 1 hour.
- Preheat oven to 375 degrees F. Line large baking sheet with parchment paper.
- In small bowl, mix white sugar and pumpkin spice.
- Scoop 2 Tbsp. of dough at a time and shape into balls. Roll balls well in pumpkin spice sugar and arrange on baking sheet 2 inches apart. For flatter cookies, slightly flatten ball of dough.
