Ingredients
2 zucchinis
2/3 cup mozzarella cheese, shredded
2 oz. mini pepperoni rounds
Sauce
4 oz. tomato paste
4 oz. tomato sauce
1 tsp. salt
1 tsp. dried oregano
1/2 tsp. garlic powder
1/2 tsp. black pepper
Directions
- Preheat oven to 375° F.
- In bowl, combine sauce ingredients.
- Slice zucchini into 1/4 inch rounds and arrange on baking sheet.
- Spoon sauce in layer onto each round, then top evenly with mozzarella and pepperoni.
- Bake 12-15 minutes, until cheese is melted and zucchini is softened.
