Gluten-Free Chocolate PB Treats

Directions:

  1. Preheat oven to 350˚ F. Line muffin tin with paper cups.
  2. Mix peanut butter and oil in large mixing bowl, stir well.
  3. Add vanilla extract, milk and brown sugar and mix well. Beat in eggs one by one.
  4. In small mixing bowl, mix together flour, baking powder and baking soda.
  5. When water is boiling, add couscous; remove from heat and cover.
  6. Add dry ingredients to rest of mixture, then stir in chocolate chips (try not to eat too many of them as you're doing this).
  7. Wait 3 minutes.
  8. With large spoon or scooper, fill each cup - leaving a small amount of room at the top.
  9. Bake 20-25 minutes.
  10. Let cool, then enjoy!
