Made with gluten-free flour, this festive coffee shop-style loaf has the warm, spiced flavor you love and can be enjoyed by everyone. While it’s great on snowy days, or with a warm cup of tea, who says gingerbread is just for holiday season? This treat is so good that we’re ready to break the rules and indulge all year long.

Gluten-Free Gingerbread Loaf

Cook Time 50 minutes

Instructions

  1. Preheat oven to 350° F. Spray loaf pan with non-stick spray. Line sprayed pan with parchment paper, leaving enough paper hanging over on the long sides so loaf can be easily removed. Spray paper with non-stick spray.
  2. In small bowl, combine spice mix ingredients.
  3. In large bowl, mix together eggs and sugar until well combined. Mix in spice mix, vanilla, applesauce and vegetable oil.
  4. Mix in baking soda, baking powder and flour until just incorporated. Stir in crystallized ginger.
  5. Bake 50 to 60 minutes, until toothpick comes out dry. Let cool 10 minutes. Remove loaf from pan; finish cooling on rack or cutting board.
