Smooth pillows of cream filling are sandwiched between cake-like cookies – and best of all, they’re naturally colorful. Leaving out artificial dyes and refined sugar, these whoopie pies get their vibrant color and oh-so sweet red velvet flavor from plant-based ingredients such as beets, apple cider vinegar and powdered monk fruit. Vegan Red Velvet Whoopie Pies

Instructions

  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. Mix together dry ingredients until evenly combined.
  3. In blender or food processor, combine milk, beets and apple cider vinegar; pulse until smooth.
  4. Mix liquid into dry ingredients until fully incorporated and smooth.
  5. On prepared baking sheet, arrange tablespoon-sized scoops of dough at least 2” apart to allow for growth.
  6. Bake 15 minutes. Remove from oven; let cool completely, about 10 minutes.
  7. Using stand or hand mixer, mix filling ingredients until smooth. Transfer to airtight container; chill until needed.
  8. In center of flat side of cake piece, place 2 tablespoons filling. Top with second cake piece and gently press down.
