You don’t even need to warm up the “zoodles.” Just be sure that the sauce is piping hot when pouring it on.

Spiralized Zucchini With Sun-Dried Tomato Sauce

Ingredients
- 2 Tbsp. olive oil
- 2 garlic cloves minced
- 1 cup sun-dried tomatoes chopped
- 1/3 cup roasted red peppers chopped (from jar)
- 2 organic tomatoes finely chopped
- 1 cup organic strained tomatoes
- 1-2 tsp. smoked paprika
- 2 bay leaves
- Pinch salt to taste
- 1 tsp. black pepper
- 2 zucchinis spiralized
- Fresh basil leaves
Instructions

In large skillet over medium heat, heat olive oil and add garlic and sun-dried tomatoes. Sauté 5 minutes.

Stir in tomatoes and peppers and cook 5 minutes. (Note: If smoother texture for sauce is desired, smash tomatoes with fork in this step.)

Stir in strained tomatoes and mix well. Add paprika, laurel, salt and pepper. Cover and cook for 6-8 minutes.

Serve on top of the spiralized zucchini and garnish with fresh basil leaves.
