A sprinkle of maple sugar and nutmeg gives the roasted squash a sweet, cozy note, while crisp-tender broccoli, mushrooms and colorful cabbage bring texture and freshness. Wrapped up with a creamy yogurt-onion dip, each bite is hearty, wholesome and bursting with harvest-time goodness — perfect for lunch, dinner or packing along on a crisp autumn picnic.

Ingredients

  • 6 large tortillas

Roasted Vegetables

Sauteed Vegetables

  • 2 Tbsp. ghee
  • 1/2 cup cauliflower florets
  • 1/2 cup broccoli florets
  • 1/2 cup leeks sliced thin
  • 1/2 cup corn
  • 1/2 cup portobello mushrooms sliced thin
  • 1/2 cup purple cabbage julienned
  • 1 onion divided
  • 1/4 cup cilantro
  • 2-4 leaves dino kale sliced
  • 1 small sweet red chili diced
  • 2 carrots julienned
  • 1 small yellow zucchini julienned
  • 1 small green zucchini julienned
  • Optional: 2 tsp. raw honey

Yogurt Dip

  • Remaining Simply Organic Onion & Chives Dip Mix
  • 1/3 cup Greek yogurt
  • ¼ cup sour cream

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add kabocha squash, garbanzo beans and ½ sliced onion to baking sheet. Sprinkle with salt, ½ tsp. Simply Organic Onion & Chives mix and add olive oil. Roast 25 minutes or until squash is tender.
  3. Remove from oven and sprinkle with nutmeg and maple sugar.
  4. Add ghee to large sauté pan and fill with remaining vegetables or sauté vegetables individually, keeping in mind that vegetables have different cook times. Sprinkle with 1 tsp. salt.
  5. To make yogurt sauce, combine Greek yogurt, sour cream and remaining Simply Organic Onion & Chives Dip mix.
  6. To assemble, add vegetables to large tortilla and garnish with cilantro and yogurt onion chives sauce. Add more salt if needed.
