Ingredients
- 1/2 cup almond flour
- 1/2 cup Rich Nuts Sprouted Walnuts-Cinnamon Crunch ground
- 1/2 cup Rich Nuts Sprouted Pecans-Maple ground
- 10 soft Medjool dates pitted
- 1 tsp. vanilla extract
- 1-2 tsp. raw cacao powder
- 1/4 tsp. cinnamon
- 1/4 tsp. Redmond Real Salt Sea Salt
- 1 Tbsp. water
- 1-1/2 Tbsp. coconut oil
Coating
- 1/4 cup unsweetened shredded coconut for rolling
Instructions

In bowl of food processor, combine almond flour with ground walnuts and pecans. Pulse several times to mix evenly.

Add dates, vanilla, cacao, cinnamon and salt.

Process until mixture forms sticky dough that holds together when pressed. If too dry add 1 more date or 1 teaspoon warm water. If too sticky add 1-2 tablespoons almond flour.

In small bowl, add shredded coconut.

Scoop about 1 tablespoon mixture and roll into ball. Roll in shredded coconut until fully covered. Place in container.

Refrigerate 15-30 minutes to firm up.

Store in refrigerator up to 1 week. Freeze up to 3 months.
