Forget the presents, balloons and big party. For your birthday, all you want is gigantic slice of frosting-slathered, candy-sprinkled, super-moist, vanilla cake. Even as a grownup, you still go ga-ga when it’s time to blow out the candles. So why wait all year? Be happy today with a breakfast that comes awfully close—these pancakes are reason enough to celebrate!

Birthday Cake Protein Pancakes

Ingredients

1 cup egg whites
1/2 scoop birthday cake-flavored protein powder
1/2 cup blueberries
1/4 tsp. vanilla extract
Cinnamon, to taste
Organic olive oil cooking spray
Optional toppings:  1 Tbsp. coconut oil or almond butter, ¼ cup blueberries

Directions

  1. Heat frying pan over medium heat.
  2. In large bowl, mix together all ingredients (except topping).
  3. Spray pan with olive oil spray.
  4. Pour batter into pan and cook until pancakes are lightly browned on each side.
  5. Top with coconut oil, almond butter and blueberries.
