Apple Cranberry Crisp

Riced cauliflower blends into the filling and the oat crumble topping for an extra boost of nutrition.

Apple Cranberry Crisp

Ingredients

  • 12 oz. cranberries
  • 2 apples cubed
  • 2 cups riced cauliflower thawed
  • ¼ cup agave
  • 2 Tbsp. lemon juice
  • ¼ tsp. salt

Topping

Instructions

  1. Preheat oven to 375 degrees F.
  2. In 9x13 baking pan, combine cranberries, apples, riced cauliflower, agave, lemon juice and salt. Stir together.
  3. In medium bowl, mix together rolled oats, riced cauliflower, coconut oil, agave, cinnamon and salt.
  4. Spread oat topping evenly over cranberry mixture.
  5. Bake 30-35 minutes until cranberries and apples are cooked through. Serve warm.
