Ingredients
Crust
- 2/3 cup almond flour
- 1/3 cup coconut flour
- 1 Tbsp. oregano
- Pinch sea salt
- 2 Tbsp. flaxseed meal or chia seeds
- 5 Tbsp. water
- 1 Tbsp. apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1-2 Tbsp. water only if dough is too dry to roll into ball
Topping
- Extra virgin olive oil
- 1 cup vegan mozzarella cheese
- 1 pear thinly sliced
- 1-1/2 cups arugula
- 1/4 cup fresh basil torn
Optional
- 1/3 cup pine nuts
Instructions

Pre-heat oven to 425 degrees F.

In medium mixing bowl, combine almond flour, coconut flour, salt and oregano.

In separate small bowl, add water to flaxseed meal or chia seeds. Stir well and let sit for 3 minutes to form gel-like “egg.”

Add ACV, oil and “egg” to flour mixture and mix well. Using hands, roll dough into ball.

Onto baking sheet or into round pizza pan, press and shape crust dough.

Onto crust, brush olive oil and layer vegan cheese, pears and pine nuts, if using.

Bake for 15-20 minutes until desired crispness.

Remove from oven and add arugula and basil. Bake another 5 minutes.
