Instructions

  1. Preheat oven to 375 degrees F.
  2. In baking dish, arrange peach halves cut side up.
  3. In bowl, mix together cream cheese, egg yolk, sugar and cinnamon.
  4. Spoon cheesecake mixture into each peach half.
  5. In saucepan, melt ghee and combine with crushed graham crackers. Evenly top each peach.
  6. Bake for 20 minutes, until peaches are softened.

Tip: For a summer treat, grill peach halves for 5 minutes before placing in baking dish.
