Baked Cheesecake Peaches
Peaches and cream are a duo for a reason. The flavors and textures work magic together. This recipe elevates the combo with a trip to the oven – and with the cream turned to
cheesecake. It takes only 30 minutes to get this stunner on your summer dessert plate. Time to pick up some peaches!
Baked Cheesecake Peaches
- 4 peaches (halved, pits removed)
- 4 oz. low-fat cream cheese (room temperature)
- 1 egg yolk
- 1/4 cup sugar
- 1/2 tsp. cinnamon
- 1 Tbsp. ghee
- 1 cup crushed honey graham crackers
- Preheat oven to 375 degrees F.
- In baking dish, arrange peach halves cut side up.
- In bowl, mix together cream cheese, egg yolk, sugar and cinnamon.
- Spoon cheesecake mixture into each peach half.
- In saucepan, melt ghee and combine with crushed graham crackers. Evenly top each peach.
- Bake for 20 minutes, until peaches are softened.
Tip: For a summer treat, grill peach halves for 5 minutes before placing in baking dish.
