Roasted Carrots With Parmesan & Herbs

This springtime carrot side dish just looks super fancy. In reality, it takes little time or effort. Arrange carrots on a sheet pan with salt, pepper and a hint of Italian herbs, then sprinkle with grated parmesan and chopped fresh parsley when fresh out of the oven. Oftentimes, simplicity is the most elegant thing on the table.

Instructions

  1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
  2. In small bowl, mix together spices.
  3. On baking sheet, arrange carrots, spray with avocado oil and sprinkle on spices.
  4. Bake 25-30 minutes until carrots are browned.
  5. Remove from oven, top with parmesan and fresh parsley. Serve immediately.
