I scream, you scream—but we don’t scream for ice cream. We scream for coconut cream! Rich and luscious, these coconut cream parfaits taste like sinful desserts, but they are full of good-for-you, body-loving ingredients. In the five layers, you’ll find gluten-free granola, whipped coconut cream, organic apple-strawberry sauce and fresh strawberries. Ready to fall in love with this healthy, delicious breakfast or snack? Scream it from the rooftops!

Ingredients
1 cup fresh organic strawberries, sliced
2 pkgs. Santa Cruz Organic Apple Strawberry Sauce
1 pkg. So Delicious Culinary Coconut Milk
1 Tbsp. Nutiva Coconut Sugar
1/4 tsp. vanilla extract
1/2 cup Bob’s Red Mill Gluten-Free Apple Blueberry Granola
Directions
- To prep, refrigerate coconut milk for 8 hours. Freeze whisk or handheld mixer paddles.
- When ready, evenly divide granola and add to two small glass jars or cups.
- In a mixing bowl, beat cold coconut milk, vanilla and sugar for 3-5 minutes until thick and fluffy. Scoop out half of coconut milk and divide evenly between glass jars.
- Add one package of strawberry sauce to each jar and top with some sliced strawberries.
- Add remaining coconut cream to jars and follow with remaining strawberries.
- Garnish with fresh mint, if desired.
