Ingredients

Hummus

Sandwiches

  • 1/2 cucumber thinly sliced
  • 1 cup carrots thinly sliced
  • 8 oz. sprouts
  • 1 tomato thinly sliced
  • 1 avocado sliced
  • 8 slices gluten-free bread

Instructions

  1. Combine beets, chickpeas, olive oil, tahini, garlic and spices; puree. Let chill.
  2. On slice of bread, layer beet hummus, cucumber, tomato, carrots, sprouts and avocado. Top with another slice of bread. Repeat to build remaining sandwiches.
