Gluten-Free Beet Hummus & Veggie Sandwich
- 1/2 cucumber thinly sliced
- 1 cup carrots thinly sliced
- 8 oz. sprouts
- 1 tomato thinly sliced
- 1 avocado sliced
- 8 slices gluten-free bread
Combine beets, chickpeas, olive oil, tahini, garlic and spices; puree. Let chill.
On slice of bread, layer beet hummus, cucumber, tomato, carrots, sprouts and avocado. Top with another slice of bread. Repeat to build remaining sandwiches.
