This homemade version is every bit as scrumptious, if not more so, thanks to gluten-free ingredients and coconut oil for frying. These better-for-you ingredients ensure you get perfectly crispy, golden chips and flaky fish bursting with flavor, resulting in an authentic English dish right at home.

Ingredients
- 4 cod filets 1/4-inch thick
- 1 cup refined coconut oil
- 2 large potatoes cut into chips
Batter
- 1 pkg. King Arthur Baking Company Gluten-Free Pancake Mix
- 1 egg
- 1-1/2 Tbsp. olive oil
- 2/3 cup unsweetened almond milk
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
For Serving
- Primal Kitchen Tartar Sauce
- 1 lemon
- Diced parsley for garnish

Preheat oven to 425 degrees F.

Line baking sheet with parchment paper and distribute chips evenly. Coat with olive oil and bake for 25-30 minutes or until golden.

In medium bowl, whisk together eggs, oil and milk. Whisk in mix. Add salt and pepper. Allow batter to sit 10 minutes to thicken.

In frying pan over medium-high heat, melt coconut oil.

Dip fish into batter to cover and let drip off a bit, then drop gently into oil. Cook 1-2 minutes on one side until golden and crispy, then flip and cook 1-2 minutes on other side. Remove with tongs or slotted utensil to blot oil. (Note: Burner does not need to be at highest temperature: Oil will continue to get hotter. Be careful.)

Serve fish with fresh lemon, tartar sauce, chips and garnish with fresh parsley.
