Jamaican jerk marinade is full of aromatics, sweet and smoky notes and complex nutmeg. There really is nothing else like it! It’s famous for a reason and delicious on anything it touches. In this recipe, shrimp is skewered with plump pineapple and red bell peppers and brushed with a tasty homemade sauce. The spice is tempered by the pineapple’s sweet juices and leaves you wanting another bite – and questioning if there is anything better.

Grilled Shrimp & Pineapple Skewers With Jerk Marinade

Ingredients

  • 1/2 lb. shrimp 31-40 count
  • 1 cup pineapple cut into chunks
  • 1 red bell pepper cut into chunks
  • Handful of fresh parsley chopped
  • Juice from 1 lime
  • 12-15 skewers

Jerk Sauce

Instructions

  1. On skewers, add shrimp, pineapple and pepper chunks, repeating sequence to fill.
  2. In bowl, whisk together jerk sauce ingredients; brush sauce onto skewers.
  3. Arrange skewers on 500 degree grill. Grill on each side for approximately 3-4 minutes (until shrimp is opaque).
  4. Top skewers with fresh parsley and lime juice.

Notes:

  1. Soak wooden skewers in cold water for 10 minutes prior to using to prevent burning.
  2. For extra flavor, marinate shrimp and pineapple in jerk sauce for at least 30 minutes.
