Jamaican jerk marinade is full of aromatics, sweet and smoky notes and complex nutmeg. There really is nothing else like it! It’s famous for a reason and delicious on anything it touches. In this recipe, shrimp is skewered with plump pineapple and red bell peppers and brushed with a tasty homemade sauce. The spice is tempered by the pineapple’s sweet juices and leaves you wanting another bite – and questioning if there is anything better.
Grilled Shrimp & Pineapple Skewers With Jerk Marinade

Ingredients
- 1/2 lb. shrimp 31-40 count
- 1 cup pineapple cut into chunks
- 1 red bell pepper cut into chunks
- Handful of fresh parsley chopped
- Juice from 1 lime
- 12-15 skewers
Jerk Sauce
- 1/4 cup olive oil
- Juice from 2 limes
- 1/2 Tbsp. honey
- 2 tsp. paprika
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper
- 1 tsp. garlic powder
Instructions

On skewers, add shrimp, pineapple and pepper chunks, repeating sequence to fill.

In bowl, whisk together jerk sauce ingredients; brush sauce onto skewers.

Arrange skewers on 500 degree grill. Grill on each side for approximately 3-4 minutes (until shrimp is opaque).

Top skewers with fresh parsley and lime juice.
Notes:

Soak wooden skewers in cold water for 10 minutes prior to using to prevent burning.

For extra flavor, marinate shrimp and pineapple in jerk sauce for at least 30 minutes.
