Displaying a distinctive accordion pattern, the thinly sliced – but still intact – spuds are crispy on the edges and tender on the inside. Hasselback Potatoes with Thyme

Ingredients

Instructions

  1. Preheat oven to 400 degrees F.
  2. On each potato, cut crosswise slits 1/8” apart, ensuring to not cut all the way through potato.
  3. In 8”x10” baking pan, place potatoes.
  4. Mix together olive oil and spices. Brush over potato slits.
  5. Bake 30 minutes; remove from oven.
  6. Brush potatoes again with oil and spice mix. Continue baking 30 minutes, until cooked through.
