This dairy- and gluten-free tetrazzini is the leftover turkey casserole that’ll feed even the pickiest out-of-town guests for the rest of their stay. Cashew cream cheese, plant-based milk and vegan butter, mozzarella and parmesan make for an extra creamy, satisfying sauce. Leftover Turkey Tetrazzini (Dairy & Gluten-Free)

Ingredients

Instructions

  1. Preheat oven to 375 degrees F.
  2. In large pot, boil chickpea noodles 6-7 minutes or until al dente. Rinse with cold water and set aside.
  3. In medium bowl, combine butter, cream cheese, plant-based milk, garlic, Italian seasoning, onion salt, vegan mozzarella, vegan parmesan and broth.
  4. Mix in turkey chunks and noodles.
  5. Pour mixture into casserole dish and top with additional parmesan and bread crumbs.
  6. Bake 15 minutes. (Note: Pasta mixture should be golden and bubbling.)
  7. Garnish with diced parsley.
