Mango Tiramisu

Ingredients

  • 8 oz. mascarpone cheese room temperature
  • 4 Tbsp. sugar
  • 1-1/2 cups heavy whipping cream
  • 1-1/2 cups mango puree
  • 1/2 cup milk
  • 16 ladyfingers
  • 1 ripe mango finely chopped (for layering)
  • Fresh mint leaves for garnish optional

Instructions

Filling

  1. In large mixing bowl, whip heavy cream until soft peaks form (about 2–3 minutes).
  2. Add mascarpone cheese, sugar and 3/4 cup mango puree
  3. Gently fold or mix on low speed until smooth and well combined. Do not overmix.
  4. Pour cold milk into shallow dish or bowl. Set aside.

Assembly

  1. Spoon 1 Tbsp. of reserved mango puree into bottom of each glass.
  2. Dip each ladyfinger on both sides into milk, then break to fit and form single layer over puree.
  3. Spoon layer of mascarpone-mango mixture over ladyfingers.
  4. Add spoonful of chopped mangoes.
  5. Repeat layers until everything is used up
  6. Finish with smooth layer of mascarpone mixture on top
  7. Cover and refrigerate for 4–6 hours (or overnight) until set and well chilled.
  8. Top with chopped mango and mint leaves just before serving.
