					Ingredients
- 8 oz. mascarpone cheese room temperature
- 4 Tbsp. sugar
- 1-1/2 cups heavy whipping cream
- 1-1/2 cups mango puree
- 1/2 cup milk
- 16 ladyfingers
- 1 ripe mango finely chopped (for layering)
- Fresh mint leaves for garnish optional
Instructions
Filling
- 
										In large mixing bowl, whip heavy cream until soft peaks form (about 2–3 minutes).
- 
										Add mascarpone cheese, sugar and 3/4 cup mango puree
- 
										Gently fold or mix on low speed until smooth and well combined. Do not overmix.
- 
										Pour cold milk into shallow dish or bowl. Set aside.
Assembly
- 
										Spoon 1 Tbsp. of reserved mango puree into bottom of each glass.
- 
										Dip each ladyfinger on both sides into milk, then break to fit and form single layer over puree.
- 
										Spoon layer of mascarpone-mango mixture over ladyfingers.
- 
										Add spoonful of chopped mangoes.
- 
										Repeat layers until everything is used up
- 
										Finish with smooth layer of mascarpone mixture on top
- 
										Cover and refrigerate for 4–6 hours (or overnight) until set and well chilled.
- 
										Top with chopped mango and mint leaves just before serving.
