Instructions

  1. Add water to medium heat, bring to boil. Add pinch of salt, then bulgur. Reduce heat to medium-high, stir occasionally. Cook 8–10 minutes or until liquid is absorbed. Remove from heat, cool 10 minutes.
  2. In bowl, add lemon juice, honey, salt, pepper, Dijon. Mix well. Drizzle in olive oil while whisking to emulsify. Taste, adjust seasoning.
  3. In large bowl, add cooked bulgur and remaining ingredients (except dressing). Drizzle in dressing, mix well. Adjust seasoning, enjoy!
