Ingredients
- 1 cup bulgur
- 2 cups water
- 1/2 small red onion sliced thin
- 1 avocado cut in chunks
- 6 kalamata olives chopped
- 6 cornichons thinly sliced
- 5 dates pits removed and chopped
- 1/4 cup unsalted shelled pistachios
- 1 large tomato cut into chunks
- 1/4 cup feta cheese
- Parsley
Dressing
- 1/2 cup extra virgin olive oil
- 1/2 Tbsp. Dijon mustard
- 1 Tbsp. hot honey
- 1 charred lemon juiced
- Pinch of salt and pepper
Instructions

Add water to medium heat, bring to boil. Add pinch of salt, then bulgur. Reduce heat to medium-high, stir occasionally. Cook 8–10 minutes or until liquid is absorbed. Remove from heat, cool 10 minutes.

In bowl, add lemon juice, honey, salt, pepper, Dijon. Mix well. Drizzle in olive oil while whisking to emulsify. Taste, adjust seasoning.

In large bowl, add cooked bulgur and remaining ingredients (except dressing). Drizzle in dressing, mix well. Adjust seasoning, enjoy!
