Mushroom Breakfast Frittata

Ingredients

Instructions

  1. Preheat oven to 400 degrees F. Place rack in middle position.
  2. In skillet over medium heat, cook mushrooms and pepper in olive oil until tender. Remove half of cooked veggies and remove skillet from burner.
  3. Whisk together eggs, thyme and rosemary. In skillet, add half of egg mixture, followed by other half of veggies, goat cheese, and finally remainder of the eggs.
  4. Bake skillet in oven 8 to 10 minutes or until toothpick placed in center comes out clean. For a crispy top, place under broiler for a minute. Optional: drizzle with chipotle mayonnaise to serve.
